Ingredients

  • 3 eggs
  • 1 cup sugar
  • 2/3 cup pure pumpkin
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 3/4 cup flour

Instructions

  1. Beat eggs and sugar together until well combined.
  2. Add remaining ingredients: pumpkin, baking soda, cinnamon, and flour, then mix thoroughly.
  3. Spray a medium jelly roll pan with non-stick spray or Pam.
  4. Spread the batter evenly on the prepared pan and bake at 350°F (175°C) for 15 minutes.
  5. Turn the baked cake onto a sheet of wax paper and carefully peel off the foil if used.
  6. Roll up the cake in wax paper only and let it cool for about 45 minutes before unrolling and filling.
