Ingredients

  • 4 potatoes (baking kind)
  • 8 Tbsp. milk
  • 3/4 cup grated Cheddar cheese
  • salt to taste
  • pepper to taste
  • 1 Tbsp. margarine

Instructions

  1. Wash potatoes well; prick some holes in them with a fork.
  2. Rub potatoes with a small amount of oil.
  3. Bake at 400° F for 45 to 60 minutes.
  4. Remove from oven and cool.
  5. Cut potatoes lengthwise and scoop out insides into a bowl.
  6. Save the potato skins.
  7. Save 1/3 cup of grated Cheddar cheese for topping.
  8. Mix the remaining cheese, milk, salt, and pepper with the mashed potatoes.
  9. Add margarine to the mixture.
  10. Using a mixer or masher, blend all ingredients together while warm.
  11. Refill the potato skins with the mashed mixture, top with reserved cheese, and serve.
