A creamy, flavorful broccoli soup with herbs, perfect for quick lunches or cozy dinners. Suitable for vegetarians if using vegetable broth and optional ingredients omitted.

Ingredients

  • 2 (8 oz.) pkg. broccoli florets
  • 2 c. chicken broth
  • 1/4 c. flour
  • 2 c. skim milk
  • 1 tsp. dried rosemary
  • dried onion flakes (optional)
  • salt and pepper to taste

Instructions

  1. Cook broccoli in water or microwave until tender-crisp. Finely chop in a food processor or chopper.
  2. Bring the chicken broth, dried onion flakes (if using), and rosemary to a boil.
  3. Add the chopped broccoli to the broth mixture.
  4. Mix some of the milk with the flour until smooth. Gradually add the flour and milk mixture to the broth.
  5. Slowly add the remaining milk and heat until flavors are blended.
