Quick Cheesy Enchiladas

Ingredients

  • 1 1/2 LB. Ground Beef or Turkey
  • 1 pkg. Taco Seasoning Mix
  • 1 c. cooked Rice (Quick)
  • 1 jar Salsa
  • 1 can of Refried Beans
  • 1 LB. Longhorn style Colby Cheese (or your favorite cheese)
  • 1 small can of Tomato Sauce
  • 1 pkg. of large Flour Tortillas

Instructions

  1. In a large skillet or Dutch oven brown meat and drain.
  2. Add Taco seasoning mix and 1/2 cup of water.
  3. Cook for 2 minutes, stirring occasionally.
  4. Add refried beans and rice.
  5. Heat through. Add 1/2 jar salsa and hot peppers slices.
  6. Grate cheese and put 1/2 of cheese in meat, bean and rice mixture.
  7. Remove from heat.
  8. In an oblong cake pan, lay one tortilla flat and spoon about 3 Tbsp. (more or less) onto middle of tortilla.
  9. Fold one side of tortilla over meat mixture and roll tortilla into a tube shape.
  10. Place at the far end of cake pan.
  11. Repeat until all the mixture has been used.
  12. Take remaining 1/2 jar of salsa and combine with the small can of tomato sauce.
  13. Mix thoroughly.
  14. Spread salsa mixture over the top of the enchiladas.
  15. Cover the enchiladas with the remaining grated cheese.
