Quick Chili With Rice

Ingredients

  • nonstick spray coating
  • 3/4 lb. ground turkey
  • 1 Tbsp. chili powder
  • 1 (29 oz.) can tomatoes, cut up
  • 1 (16 oz.) can red kidney beans, drained
  • 1 (12 oz.) can tomato juice
  • 1/2 c. water
  • 1 Tbsp. dried minced onion
  • 1/2 tsp. salt
  • 1/2 tsp. ground cumin
  • 1/2 tsp. dried oregano, crushed
  • 1/4 tsp. pepper
  • 1/8 tsp. garlic powder
  • 1 c. quick cooking rice
  • sliced green onion (optional)

Instructions

  1. Spray a 12-inch skillet with nonstick spray coating.
  2. Add turkey; cook until no longer pink.
  3. Drain off fat.
  4. Stir in chili powder; cook 1 minute.
  5. Stir in undrained tomatoes, beans, tomato juice, water, dried onion, salt, cumin, oregano, pepper, garlic powder and rice.
  6. Bring to boiling; reduce heat.
  7. Cover and simmer for 5 minutes, or until rice is tender.
  8. Garnish with sliced green onion, if desired.
