Ingredients

  • 1 pkg yellow cake mix
  • 1/2 cup softened butter
  • 2/3 cup water
  • 3 eggs
  • 1 (8 oz) can crushed pineapple, drained
  • 1 cup flaked coconut
  • 1 cup chopped pecans
  • 1 teaspoon almond extract
  • 1 teaspoon coconut extract

Instructions

  1. In a mixing bowl, beat the cake mix and softened butter until well combined.
  2. Add water, lightly beaten eggs, drained crushed pineapple, almond extract, and coconut extract; mix well.
  3. Fold in shredded coconut and chopped pecans until evenly incorporated.
  4. Spoon batter into greased or paper-lined muffin tins, filling each about 2/3 full.
  5. Bake in a 350°F (175°C) oven for 20 minutes or until a toothpick inserted into the center comes out clean.
  6. Allow muffins to cool slightly before removing from the pan.
