Ingredients

  • 2 Tbsp butter or margarine
  • 1 cup chopped green pepper
  • 1 cup sliced celery
  • 1 cup sliced green onions
  • 1 cup uncooked rice
  • 1 (14 1/2 oz) can peeled whole tomatoes, chopped
  • 1 tsp salt
  • 1 tsp poultry seasoning
  • 1 clove garlic, minced
  • 1/4 tsp ground red pepper

Instructions

  1. Melt butter in a large skillet over medium heat.
  2. Add chopped green pepper, sliced celery, and sliced green onions; cook until tender but not brown.
  3. Stir in the chopped tomatoes, salt, poultry seasoning, minced garlic, and ground red pepper.
  4. Add uncooked rice and chicken broth; bring to a boil.
  5. Stir once or twice, then reduce heat, cover, and simmer for 25 to 30 minutes until rice is tender and mixture is slightly moist.
  6. Stir in the peeled crawfish tails and cook until thoroughly heated, about 2 minutes.
