Quick "Crock-Pot" Gumbo

A hearty and flavorful Cajun-inspired gumbo with tender chicken, earthy mushrooms, and fresh green onions, perfect for comforting family dinners or casual gatherings.

Ingredients

  • 5 or 6 chicken breasts
  • 1 small bunch green onions
  • 4 stalks celery
  • 2 pkg. brown gravy mix
  • salt and pepper
  • 1 (8 oz.) pkg. fresh mushrooms

Instructions

  1. In a skillet, brown chicken breasts and green onions until browned.
  2. Prepare brown gravy mix according to package directions.
  3. Transfer the browned chicken and onions to the crock-pot.
  4. Add celery and mushrooms to the crock-pot.
  5. Cook on low for 6 to 7 hours or on high for 4 to 5 hours until chicken shreds easily with a fork.
  6. Serve the gumbo over rice.
