Ingredients

  • 1 lb. lean ground beef
  • 1 (15 1/2 oz.) jar spaghetti sauce
  • 1/2 cup water
  • 8 uncooked lasagna noodles
  • 2 cups cottage cheese
  • 3 cups mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Brown the ground beef in a skillet over medium heat.
  2. Drain excess fat from the ground beef.
  3. Add spaghetti sauce and water to the beef, stirring to combine.
  4. Spread one-third of the sauce mixture onto a lightly greased 12 x 8 x 2-inch microwave-safe dish.
  5. Place 4 uncooked lasagna noodles on top of the sauce.
  6. Layer 1 cup of cottage cheese and 1 cup of mozzarella cheese over the noodles.
  7. Add another layer with 4 more noodles, then spread with the remaining cottage cheese and mozzarella cheese.
  8. Pour the remaining sauce over the layered ingredients.
  9. Sprinkle grated Parmesan cheese over the top.
  10. Cover tightly with plastic wrap, leaving a small corner uncovered to vent steam.
  11. Microwave on medium for 32 to 35 minutes, turning the dish after 15 minutes.
  12. Uncover and sprinkle with the remaining 1 cup of mozzarella cheese.
  13. Microwave on medium for an additional 2 minutes until cheese is melted and bubbly.
