Quick Red Rice

Ingredients

  • Vegetable cooking spray
  • 2 teaspoons vegetable oil
  • 1 1/4 cups chopped onion
  • 3/4 cup chopped Canadian bacon
  • 1 (10 3/4-ounce) can reduced-sodium, reduced-fat tomato soup
  • 1 1/2 cups water
  • 1 cup instant rice, uncooked
  • 1/4 teaspoon pepper
  • 1/4 teaspoon hot sauce
  • 1/8 teaspoon salt

Instructions

  1. Coat a medium saucepan with cooking spray; add oil. Place over medium-high heat until hot. Add onion and Canadian bacon; saute 5 minutes or until onion is tender.
  2. Stir in soup and water. Bring to a boil. Add rice and remaining ingredients. Cover, reduce heat, and simmer 10 minutes or until rice is tender and liquid is absorbed.
