Quick Tomato Beef

Ingredients

  • 1 lb. ground beef
  • 1 (14 1/2 oz.) can original recipe stewed tomatoes
  • 1 medium onion, cut in chunks
  • 1/2 green pepper, cut in strips
  • 1/8 tsp. cayenne pepper
  • 1 (16 oz.) can whole new potatoes, drained and sliced
  • 1 c. shredded Monterey Jack or Cheddar cheese

Instructions

  1. In skillet, brown beef and drain. Drain tomatoes, reserving liquid into skillet. Add onion, green pepper and cayenne.
  2. Cook over high heat 5 to 8 minutes or until slightly thickened, stirring often. Stir in tomatoes and potatoes.
  3. Heat thoroughly. Top with cheese; heat until melted.
