Ingredients

  • 2 bunches rabes
  • olive oil (cover bottom of pan)
  • 4 cloves garlic
  • red pepper to taste
  • black pepper to taste
  • 1/4 c. white wine
  • salt (if desired)

Instructions

  1. Cut stems, and wash rabes; drain.
  2. Heat garlic, olive oil and red pepper for about 1 minute on medium heat.
  3. (Do not burn garlic.)
  4. Add rabes to oil; cover.
  5. Add a little water;
  6. stir rabes every few minutes.
  7. When they are tender, add white wine. Remove cover and let cook just a few more minutes.
