- Cut stems, and wash rabes; drain.
- Heat garlic, olive oil and red pepper for about 1 minute on medium heat.
- (Do not burn garlic.)
- Add rabes to oil; cover.
- Add a little water;
- stir rabes every few minutes.
- When they are tender, add white wine. Remove cover and let cook just a few more minutes.
