Ingredients

  • 2 small pkg. pecans
  • 1 angel food cake
  • 4 Tbsp. cold water
  • 1 c. white sugar
  • 1 c. boiling water
  • 1 large can crushed pineapple
  • 2 Tbsp. lemon juice
  • 2 pkg. unflavored gelatin
  • 1 can coconut
  • 4 pkg. Dream Whip
  • red and green cherries (optional)

Instructions

  1. Mix gelatin, cold water, white sugar, crushed pineapple, lemon juice, and pecans. Set in refrigerator until as thick as egg whites.
  2. Whip 2 packages of Dream Whip and fold in the gelatin mixture.
  3. Pour the mixture over a cake lined pan. Layer another layer of angel food cake on top.
  4. Mix the remaining 2 packages of Dream Whip and cover the cake with it.
  5. Sprinkle coconut on top and decorate with cherries, if desired.

Tips & Substitutions

To achieve the best texture, ensure the gelatin mixture is thickened similar to egg whites before integrating with the Dream Whip. If you don't have Dream Whip, you can use whipped cream as a substitute, but be sure to stabilize it with some powdered sugar. For added flavor, consider toasting the pecans lightly before adding them to the mixture.

Serving Suggestions

This cake is a delightful dessert that pairs beautifully with a scoop of vanilla ice cream or a dollop of whipped cream. For a festive touch, consider serving it alongside a refreshing Cucumber And Melon Salad. Garnish each slice with additional cherries for a pop of color and flavor.

Storage & Reheating

Store any leftover Snowball Pecan Cake in an airtight container in the refrigerator for up to 3 days. To keep the cake moist, avoid cutting into it until you're ready to serve. If you need to reheat, do so gently in the microwave for a few seconds, but it's best enjoyed chilled.
