Ingredients

  • angel food cake, cooled and split horizontally to make 3 layers
  • 2 c. chilled whipping cream
  • 1/2 c. confectioners sugar
  • food coloring
  • almond extract
  • rum extract
  • peppermint extract

Instructions

  1. Beat the chilled whipping cream and confectioners sugar until stiff peaks form.
  2. Divide the whipped cream into two portions.
  3. To one portion of frosting, stir in several drops of yellow food coloring and 1/2 teaspoon of almond extract.
  4. To the other portion of frosting, add red food coloring and 1/2 teaspoon of rum extract.
  5. Place one layer of angel food cake on a serving plate.
  6. Spread the yellow-colored frosting over the first layer.
  7. Add the second layer of cake and spread the pink-colored frosting on top.
  8. Place the third layer of cake and frost as desired to complete the rainbow delight cake.
