Ingredients

  • 2 1/4 cups biscuit mix
  • 1/4 cup sugar
  • 1 egg
  • 2/3 cup milk
  • 1 cup fruit cocktail
  • 1 tablespoon sugar

Instructions

  1. Mix biscuit mix and 1/4 cup sugar; add beaten egg and milk.
  2. Mix until just blended.
  3. Gently stir in drained fruit cocktail.
  4. Spoon the batter into greased or lined muffin pans.
  5. Mix 1 tablespoon sugar and 1/4 teaspoon cinnamon.
  6. Sprinkle the cinnamon sugar mixture over the tops of the muffins.
  7. Bake at 400°F (200°C) for 15 to 20 minutes.
