Ingredients

  • 2 1/2 cups skim milk
  • 6 slices raisin bread, cubed
  • 2 eggs
  • 2 Tbsp honey
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 tsp ground cinnamon
  • 1/8 tsp ground nutmeg

Instructions

  1. Place milk in a large saucepan; heat until warm (do not boil). Remove from heat.
  2. Add bread and the next six ingredients; stir well.
  3. Spoon mixture evenly into 6 (4 ounce) ramekins or custard cups coated with cooking spray.
  4. Place ramekins in a 13 x 9 x 2-inch baking dish; add hot water to a depth of 1 inch.
  5. Bake at 350°F for 20 minutes; shield with aluminum foil and bake an additional 10 minutes or until a knife inserted in center comes out clean.
  6. Remove ramekins from water and serve pudding warm or chilled.
