Raisin Coconut Pie

Ingredients

  • 1 c. seedless raisins
  • 4 eggs, slightly beaten
  • 1 1/4 c. sugar
  • 1 c. light corn syrup
  • 1 tsp. vanilla
  • 1 1/2 c. flaked coconut
  • 2 pie shells

Instructions

  1. Put raisins in hot water to cover for 15 minutes.
  2. Combine eggs, sugar, corn syrup, vanilla, well drained raisins and coconut. Mix all ingredients until well blended. Pour into pie shells and dot lightly with margarine.

  5. Stick with fork occasionally while baking.
