Raisin Wine Pie

Ingredients

  • 2 c. golden, seedless raisins
  • 1 1/2 c. boiling water
  • 1/2 c. wine
  • 1/2 c. sugar
  • 3 Tbsp. flour
  • 3 Tbsp. lemon juice
  • 1 Tbsp. lemon rind
  • few drops red food coloring
  • pastry for a 2-crust 8-inch pie

Instructions

  1. Rinse raisins, add water, boil for 5 minutes.
  2. Stir in wine; blend sugar and flour, stir and boil for 1 minute longer, stirring constantly.
  3. Remove from heat, stir in lemon rind, juice and coloring.
  4. Turn into pastry lined pie plate.
  5. Cover with top crust. Flute edges, prick surface with fork.
  6. To glaze, brush egg white over surface.
  7. Sprinkle lightly with sugar and cinnamon.
  8. Bake at 425° for 30 minutes.
