Raspberry-Grilled Hens

Ingredients

  • 1/4 cup white wine vinegar
  • 1/4 cup orange juice
  • 1/4 cup vegetable oil
  • 1/4 cup fresh raspberries
  • 3 small cloves garlic
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 (1 lb each) Cornish hens
  • 1 c. fresh raspberries

Instructions

  1. In a food processor or blender, combine white wine vinegar, orange juice, vegetable oil, 1/4 cup fresh raspberries, garlic, salt, and black pepper.
  2. Cover and process for 1 minute or until all ingredients are thoroughly combined.
  3. Set aside the marinade.
  4. Split the Cornish hens in half lengthwise.
  5. Marinate the hens in the raspberry mixture for at least 30 minutes.
  6. Preheat the grill to medium-high heat.
  7. Grill the hens until cooked through and nicely charred, about 20-30 minutes, basting with the marinade as needed.
  8. Remove from grill and serve garnished with fresh raspberries.
