Ingredients

  • 1/2 cup water
  • 3/4 cup sugar
  • 4 cups fresh raspberries or 2 (12 oz) bags frozen raspberries, thawed
  • 3 Tbsp raspberry flavored Schnapps or berry flavored liqueur
  • 1 Tbsp fresh lemon juice
  • mint sprigs for garnish

Instructions

  1. Heat water and sugar in a large saucepan over medium heat until boiling.
  2. Reduce heat and simmer gently until the sugar is completely dissolved.
  3. Allow the syrup to cool.
  4. Press the raspberries through a wire mesh sieve over a medium bowl to remove seeds, yielding about 2 cups of juice.
  5. Combine the raspberry juice, cooled syrup, remaining raspberries, Schnapps, and lemon juice in a large bowl.
  6. Chill the mixture thoroughly before freezing in an ice cream maker according to manufacturer instructions.
  7. Serve garnished with mint sprigs.
