Raw Spiced Applesauce

Ingredients

  • 4 Red Delicious apples (about 1 1/4 lbs.), left unpeeled, cored, and cut into small chunks
  • 1/2 teaspoon orange zest
  • 2 tablespoons fresh orange juice
  • 1/4 teaspoon ground cardamom
  • 1/8 teaspoon cinnamon
  • Pinch kosher salt
  • 1/4 cup plain low-fat Greek yogurt
  • 1/4 cup chopped toasted pecans

Instructions

  1. Combine apples, zest, juice, cardamom, cinnamon, and salt in a food processor and whirl until smoothly pureed, 3 to 5 minutes, scraping down sides of bowl if necessary. (Bits of peel will be visible.)
  2. Divide among 4 bowls. Top each serving with a dollop of yogurt and some pecans.
  3. Note: Nutritional analysis is per 1/2-cup serving.
