Really Grilled Cheese

Ingredients

  • 1 teaspoon pickled hot peppers or 1 teaspoon sweet pickled pepper, chopped
  • 1 tablespoon Dijon mustard
  • 2 large flat bread, such as flour tortillas
  • 2 -3 large chard leaves (or other greens, such as kale or spinach)
  • 3 slices prosciutto or 3 slices deli-sliced ham
  • 3 -4 slices provolone cheese
  • olive oil flavored cooking spray

Instructions

  1. Preheat grill or pan to high.
  2. In a small bowl, combine peppers and mustard.
  3. Use a fork to mash them to a paste.
  4. Spread mixture over one side of one piece of flat bread.
  5. Arrange chard over mustard, then top with proscuitto and cheese.
  6. Top with remaining flat bread.
  7. Spritz top of sandwich with cooking spray, the place it piled side down on grill on grill pan.
  8. Cook 2-3 minutes or until grill marks form on bottom.
  9. Reduce heat on one side of the grill to the lowest setting.
  10. If using a grill pan, reduce burner heat to low.
  11. Spritz top of sandwich with cooking spray, then use a spatula to carefully flip sandwich.
  12. If using a grill, move sandwich to cooler side.
  13. Close grill and cook until cheese is melted, about 3-4 minutes.
  14. Cut sandwich into quarters, and serve.
