Ingredients

  • 1 1/2 cups whole wheat flour
  • 1 cup unbleached flour
  • 1/2 cup bran
  • 1/2 cup sugar
  • 1 tablespoon shredded orange peel
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup clabbered milk
  • 1 slightly beaten egg

Instructions

  1. Mix dry ingredients, including whole wheat flour, unbleached flour, bran, sugar or honey, shredded orange peel, baking powder, baking soda, and salt.
  2. Blend milk with the slightly beaten egg until well combined.
  3. Add the liquid mixture to the dry ingredients and stir until just combined.
  4. Pour the batter into a greased loaf pan dusted with wheat germ.
  5. Sprinkle wheat germ on top of the batter.
  6. Bake at 350°F (175°C) for 50 to 60 minutes until a toothpick inserted into the center comes out clean.
  7. Let the loaf rest in the pan for 10 minutes, then turn out onto a wire rack.
  8. Brush the loaf with honey while still warm.
