Ingredients

  • 2 lb. stir-fry beef
  • 28 oz. whole tomatoes
  • 6 oz. tomato paste
  • 3 Tbsp. chili powder
  • 1 tsp. dried oregano
  • 1/4 tsp. crushed red pepper
  • 1 green pepper, chopped
  • 1 c. water

Instructions

  1. In a saucepan, cook the chopped onion in vegetable oil for 3 to 4 minutes.
  2. Add garlic and stir for 1 minute.
  3. Remove the onion and garlic to a plate.
  4. Add beef stir-fry in batches and cook until well browned, about 5 to 6 minutes each batch.
  5. Return the cooked onion and garlic along with the beef to the saucepan.
  6. Add whole tomatoes, tomato paste, chili powder, dried oregano, crushed red pepper, chopped green pepper, and water.
  7. Cover and simmer, stirring occasionally to break up the tomatoes, for 1 1/2 hours or until the beef is tender.
  8. Add the chopped green pepper.
  9. Continue to simmer, stirring occasionally, for another 30 minutes.
