Ingredients

  • 1 lb. sirloin steak
  • 1 (9 oz.) pkg. frozen artichokes
  • 4 green onions
  • 1/4 cup red wine vinegar
  • 2 Tbsp. lemon juice
  • 1/2 tsp. garlic salt
  • 1/2 tsp. black pepper
  • 1 cup sliced fresh mushrooms
  • 10 cherry tomatoes
  • 1 medium carrot
  • 1/3 cup olive or salad oil
  • 1/2 tsp. shredded lemon peel
  • 1 tsp. dried thyme
  • 1/2 tsp. dried marjoram
  • 4 cups torn salad greens

Instructions

  1. Slash fat edges of the steak.
  2. Broil the steak 3 inches from heat for 6 minutes.
  3. Turn the steak and broil until done (medium 6 to 9 minutes).
  4. Allow the steak to cool.
  5. Cut the steak into thin slices.
  6. Place the sliced steak in a plastic bag in a bowl.
  7. In a small bowl, whisk together red wine vinegar, lemon juice, garlic salt, black pepper, shredded lemon peel, dried thyme, and dried marjoram to make the marinade.
  8. Add the artichokes, green onions, mushrooms, cherry tomatoes, and sliced carrot into the bowl with the steak.
  9. Pour the marinade over the ingredients and toss gently to combine.
  10. Arrange the torn salad greens on a serving platter.
  11. Top the greens with the marinated steak and vegetable mixture.
  12. Serve immediately or chilled.
