Red Cherry Roll

Ingredients

  • 1 c. sugar
  • 1 Tbsp. flour
  • 2 c. canned cherry juice
  • 1 Tbsp. butter
  • 1 1/2 c. sifted flour
  • 2 1/4 tsp. baking powder
  • 1/4 tsp. salt
  • 2 Tbsp. shortening
  • 1/2 c. milk

Instructions

  1. Mix sugar and 1 tablespoon flour.
  2. Add cherry juice and cook 1 minute.
  3. Add butter; let stand.
  4. Sift 1 1/2 cups flour with baking powder and salt; cut in shortening.
  5. Add milk to make a soft dough. Turn onto floured board; knead about 20 seconds, then roll into oblong 1/4-inch thick.
  6. Spread cherries on dough; roll like jelly roll and press edges together.
  7. Cut into 1 1/2-inch slices.
  8. Place on a greased pan and pour cherry juice sauce over top.
  9. Bake in hot oven (425°) for 25 to 30 minutes.
  10. You may shorten this recipe by using a biscuit mix.
  11. Other fruit may also be substituted for cherries.
