Ingredients

  • 2 (10 oz.) pkg. frozen red raspberries, thawed
  • 1 (6 oz.) pkg. red raspberry gelatin
  • 1 pt. vanilla ice cream
  • 1 (6 oz.) can frozen lemonade concentrate
  • 1/2 cup chopped pecans

Instructions

  1. Drain the thawed raspberries.
  2. In a medium saucepan, heat water until boiling to make 2 1/3 cups of liquid.
  3. Pour the boiling water over the red raspberry gelatin into a large mixing bowl.
  4. Add the vanilla ice cream to the gelatin mixture.
  5. Stir until the ice cream is melted and then stir in the frozen lemonade concentrate.
  6. Chill the mixture until it is partially set.
  7. Gently fold in the drained raspberries and chopped pecans.
  8. Pour the mixture into an oiled 6-cup mold and refrigerate until fully set.
