Ingredients

  • 1 (9-inch) pie crust, baked
  • 1 (3 oz.) package cream cheese
  • 1 (8 oz.) can pineapple tidbits, drained
  • 1 banana, peeled and sliced
  • 1 quart fresh strawberries, sliced
  • 1 cup white sugar
  • 2 tablespoons cornstarch
  • 3 drops red food coloring (optional)
  • 3 cups frozen whipped topping, thawed
  • 1/2 cup flaked coconut, toasted
  • 1/2 cup slivered almonds, toasted

Instructions

  1. Slice the strawberries and combine them with sugar, cornstarch, and red food coloring if desired. Mix well.
  2. Cook the strawberry mixture over medium heat in a medium saucepan until thickened. Remove from heat and let cool.
  3. Spread the cream cheese evenly over the baked pie crust.
  4. Layer sliced bananas over the cream cheese.
  5. Pour the cooled strawberry mixture over the bananas.
  6. Fold in the drained pineapple tidbits gently into the fruit layers.
  7. Spread the thawed whipped topping over the assembled fruit layer.
  8. Sprinkle toasted coconut and slivered almonds on top as garnish.
