Fruit Surprise Pie

Ingredients
- 1 (9-inch) pie crust, baked
- 1 (3 oz.) package cream cheese ⓘ
- 1 (8 oz.) can pineapple tidbits, drained
- 1 banana, peeled and sliced ⓘ
- 1 quart fresh strawberries, sliced ⓘ
- 1 cup white sugar
- 2 tablespoons cornstarch ⓘ
- 3 drops red food coloring (optional) ⓘ
- 3 cups frozen whipped topping, thawed ⓘ
- 1/2 cup flaked coconut, toasted ⓘ
- 1/2 cup slivered almonds, toasted ⓘ
Instructions
- Slice the strawberries and combine them with sugar, cornstarch, and red food coloring if desired. Mix well.
- Cook the strawberry mixture over medium heat in a medium saucepan until thickened. Remove from heat and let cool.
- Spread the cream cheese evenly over the baked pie crust.
- Layer sliced bananas over the cream cheese.
- Pour the cooled strawberry mixture over the bananas.
- Fold in the drained pineapple tidbits gently into the fruit layers.
- Spread the thawed whipped topping over the assembled fruit layer.
- Sprinkle toasted coconut and slivered almonds on top as garnish.
