Ingredients

  • 1 1/2 cups pumpkin
  • 1 cup evaporated skim milk
  • 1 Tbsp Knox gelatine
  • 2 tsp pumpkin pie spice

Instructions

  1. Sprinkle gelatin into 1/3 cup milk and let set for 1 minute.
  2. Heat the mixture in the microwave on High for about 1 to 1 1/2 minutes until dissolved.
  3. Add the remaining milk to the dissolved gelatin mixture.
  4. Add pumpkin and pumpkin pie spice, then blend well.
  5. Place the mixture over ice water and stir until it starts to thicken.
  6. Pour the thickened mixture into a diet crust.
  7. Chill until the pie is firm before serving.
