A creamy, cheesy squash casserole with tender vegetables and flavorful herbs, perfect as a comforting side dish for family dinners or holiday gatherings.

Ingredients

  • 3 lb. yellow squash
  • 2 carrots
  • 1 large onion
  • 1 can cream of mushroom soup
  • 1 (8 oz.) carton sour cream
  • 1 cup grated Cheddar cheese
  • 1 package Pepperidge Farm herb dressing

Instructions

  1. Mix together the boiled, drained, and mashed yellow squash, grated carrots, chopped onion, cream of mushroom soup, sour cream, and grated Cheddar cheese.
  2. Sprinkle a small amount of herb dressing on the bottom of the baking pan.
  3. Spread the squash mixture over the dressing layer.
  4. Top with the remaining herb dressing.
  5. Dot the casserole with margarine.
  6. Bake for approximately 45 minutes at 350°F until hot and bubbly.
