Refreshing refrigerated dill cucumbers offer crisp, tangy flavor with fragrant dill and garlic, perfect as a cool snack or side for summer meals.

Ingredients

  • 3 or 4 firm cucumbers
  • 8 cloves garlic
  • 1 can dill seed or 2 bunches fresh dill with seed heads
  • 3 cups water
  • 1 cup white vinegar
  • 1/8 cup salt

Instructions

  1. Make a brine by combining water, vinegar, and salt and bring to a boil.
  2. Let the brine cool.
  3. Quarter the cucumbers lengthwise and place in a large bowl with dill and peeled garlic cloves.
  4. Pour the cooled brine over the cucumbers.
  5. Cover the bowl and weight down if necessary to keep cucumbers submerged in the brine.
  6. Refrigerate for 4 days.
  7. Transfer the pickles and brine into jars.
  8. Keep refrigerated; will keep for several months.
