- Prepare the mashed potatoes if using fresh; instant potatoes may be used after prepared.
- In a large mixing bowl, combine warm water, yeast, and a teaspoon of sugar. Let sit until frothy, about 5-10 minutes.
- In a separate large bowl, melt margarine or butter and add milk, sugar, eggs, and salt. Mix well.
- Add the prepared mashed potatoes to the wet ingredients and mix thoroughly.
- Gradually add the yeast mixture to the wet ingredients.
- Stir in the flour gradually, mixing until a soft dough forms.
- Knead the dough on a floured surface for about 8-10 minutes until smooth.
- Place the dough in a greased bowl, cover, and refrigerate overnight or for at least 2 hours.
- Remove the dough from the refrigerator, punch down, and shape into rolls.
- Place the rolls on a greased baking sheet, cover, and let rise until doubled in size, about 1 hour.
- Bake in a preheated oven at 375°F (190°C) for 15-20 minutes until golden brown.
- Serve warm or cooled as desired.
