Ingredients

  • 1 cup mashed potatoes
  • 2 sticks margarine or butter
  • 1 cup milk
  • 3/4 cup sugar
  • 2 eggs
  • 1 teaspoon salt
  • 2 packages dry yeast
  • 7 cups all-purpose flour
  • 1 large cup warm water

Instructions

  1. Prepare the mashed potatoes if using fresh; instant potatoes may be used after prepared.
  2. In a large mixing bowl, combine warm water, yeast, and a teaspoon of sugar. Let sit until frothy, about 5-10 minutes.
  3. In a separate large bowl, melt margarine or butter and add milk, sugar, eggs, and salt. Mix well.
  4. Add the prepared mashed potatoes to the wet ingredients and mix thoroughly.
  5. Gradually add the yeast mixture to the wet ingredients.
  6. Stir in the flour gradually, mixing until a soft dough forms.
  7. Knead the dough on a floured surface for about 8-10 minutes until smooth.
  8. Place the dough in a greased bowl, cover, and refrigerate overnight or for at least 2 hours.
  9. Remove the dough from the refrigerator, punch down, and shape into rolls.
  10. Place the rolls on a greased baking sheet, cover, and let rise until doubled in size, about 1 hour.
  11. Bake in a preheated oven at 375°F (190°C) for 15-20 minutes until golden brown.
  12. Serve warm or cooled as desired.
