A no-bake refrigerator pie with a rich chocolate cookie crust and creamy vanilla ice cream filling, perfect for warm days or casual gatherings with a sweet tooth.

Ingredients

  • 1 1/2 cups chocolate cookie crumbs
  • 1 1/2 pints vanilla ice cream
  • 1/4 cup butter
  • 1/4 cup sugar

Instructions

  1. Roll thin chocolate wafers with a rolling pin to make crumbs.
  2. Cream the butter, then add the crumbs and sugar, blending thoroughly.
  3. Cover the bottom of a dish with the crumb mixture, pressing down firmly.
  4. Spread vanilla ice cream evenly over the crumb crust, packing it down well.
  5. Press remaining crumbs firmly on top of the ice cream layer.
  6. Garnish with whipped cream.
  7. Return to refrigerator to freeze until firm before serving.
