Ribble Soup is a hearty, comforting dish featuring tender beef, sweet corn, and delicate ribble crumbles, perfect for cozy gatherings and robust flavors.

Ingredients

  • 2 qt. beef stock
  • 2 cans corn
  • 2 eggs
  • 2 c. flour
  • salt

Instructions

  1. Cook beef well done and remove from broth.
  2. Add corn, salt, and pepper to boiling broth and cook for 5 to 10 minutes.
  3. Make ribble by slightly stirring 2 eggs and adding flour until crumbly when rubbed between palms.
  4. Add ribble to the boiling broth and corn, stirring as you add.
  5. Cook a few minutes until the ribble looks like big grains of rice.
  6. Take care not to let the soup boil over.
