Ingredients

  • 4 cups cooked rice
  • 1/4 cup minced parsley
  • 1/2 teaspoon salt
  • 5 or 6 eggs
  • 2 cloves garlic
  • 1/4 teaspoon pepper

Instructions

  1. Drain the cooked rice on a cloth to remove excess moisture.
  2. In a mixing bowl, combine the drained rice with eggs, salt, pepper, and minced parsley.
  3. Chill the mixture in the refrigerator until firm enough to shape.
  4. Form the mixture into small balls.
  5. Deep fry the rice balls in hot oil until they are light brown and crispy.
  6. Remove from oil and drain on paper towels before serving.
