Ingredients

  • 1 lb. fresh mushrooms, sliced
  • 1 onion, chopped
  • butter
  • juice of 1 lemon
  • 1 large head cauliflower
  • garlic
  • basil
  • salt

Instructions

  1. Sauté sliced mushrooms and chopped onion in butter with the juice of 1 lemon until tender.
  2. Add cauliflower florets to the skillet and sauté with butter, garlic, basil, salt, and pepper to taste until cauliflower is tender.
  3. Mix the sautéed vegetables with cooked brown rice and grated Cheddar cheese.
  4. Transfer the mixture to a greased casserole dish, cover, and bake at 350°F for 30 minutes until hot and bubbly.
