Ingredients

  • 9 x 13-inch unbaked pie crust
  • 1 cup cooled rice
  • 1/2 cup butter
  • 1 1/2 cups sugar
  • 6 eggs
  • 1 teaspoon salt
  • 2 tablespoons vanilla
  • 3 cups milk
  • cinnamon (optional)

Instructions

  1. Cook rice as directed and let it cool.
  2. In a bowl, beat together butter, sugar, and eggs.
  3. Add salt, vanilla, and milk to the mixture.
  4. Stir the cooled rice into the mixture.
  5. Pour the mixture into the unbaked pie crust.
  6. Bake at 400°F (200°C) for 15 minutes.
  7. Reduce oven temperature to 350°F (175°C).
  8. Bake for an additional hour until set and golden.
