A quick and flavorful rice dish with buttery richness and caramelized onion, perfect as a comforting side or a base for various meals.

Ingredients

  • 8 Tbsp. butter
  • 1/2 chopped onion
  • 2 c. hot chicken stock
  • 1 c. rice

Instructions

  1. Melt 2 tablespoons of butter in a saucepan.
  2. Add the chopped onion and stir until golden brown.
  3. Add the rice and shake until the grains are coated with butter and onion.
  4. Pour in the hot chicken stock.
  5. Cover the pot and simmer until the liquid is absorbed, or bake in a 375°F oven until done.
  6. Add the remaining 2 tablespoons of melted butter to the cooked rice.
  7. Toss the rice with a fork to distribute the butter evenly.
