Ingredients

  • 8-10 c. self-rising flour
  • 1/4 to 1/2 c. cooking oil
  • 2 1/2 to 3 c. boiling water
  • 6-8 c. chicken broth
  • 1 fryer, boiled until tender, skin and bones removed
  • 3-4 boiled eggs, chopped
  • salt and pepper
  • oleo, softened

Instructions

  1. Sift self-rising flour into a large bowl to prepare the dumpling dough.
  2. Make a nest in the center of the flour and pour in the cooking oil.
  3. Add boiling water into the nest and mix with a spoon to blend flour, oil, and water into a thick paste.
  4. Allow the mixture to cool enough to handle, then knead and slap it with your hand 8 to 10 times to bond.
  5. Pinch or break off 3-4 inch portions, slap and transfer to a floured cutting board.
  6. Roll each portion with a rolling pin until reaching your desired thickness.
  7. Cut the rolled dough into strips, then break into 1 1/2 to 2 inch pieces for dumplings.
  8. Drop the dumplings into boiling chicken broth at low heat, adding water if needed to use all dough.
  9. Season with salt and pepper to taste.
  10. When all dumplings are added, prepare the top crust by rolling remaining dough like dumplings and cutting into strips.
  11. Place the top crust over the filling and dumplings in the pot, then cook until heated through and crust is set.
