  • 1/8 teaspoon salt
  • 1 1/2 cups milk
  • 1/4 cup butter
  • 1 teaspoon vanilla

Instructions

  1. Line an 8 or 9-inch square pan with foil; butter the foil.
  2. In a heavy 4-quart saucepan, stir together sugar, cocoa, and salt.
  3. Stir in milk and cook over medium heat, stirring constantly, until mixture comes to a full rolling boil, without stirring.
  4. Cook until the syrup reaches 234°F or until a drop forms a soft ball when dropped into very cold water and flattens when removed from water.
  5. Remove from heat.
  6. Add butter and vanilla; do not stir.
  7. Cool at room temperature to 110°F (lukewarm).
  8. Beat with a wooden spoon until fudge thickens and loses some of its gloss.
  9. Quickly spread into the prepared pan.
  10. Cool, then cut into squares.

Tips & Substitutions

For a smoother texture, ensure all ingredients are at room temperature before starting. If you prefer a less sweet fudge, reduce the sugar slightly and add a pinch more cocoa for richness. You can substitute the butter with coconut oil for a dairy-free version. Be mindful of the temperature while cooking; using a candy thermometer will help achieve the perfect soft ball stage.

Serving Suggestions

Cut the fudge into small squares and serve as a decadent treat for parties or gatherings. It pairs beautifully with a cup of Hot Cocoa Drink for a comforting dessert experience. You can also serve it alongside coffee or tea, or use it as a topping for ice cream. For a fun twist, try adding chopped nuts or dried fruits to the fudge mixture before it sets.

Storage & Reheating

Store any leftover fudge in an airtight container at room temperature for up to two weeks. If you live in a humid environment, refrigerate it to prevent it from becoming too soft. For longer storage, freeze the fudge in a tightly sealed container or wrap it tightly in plastic wrap, then foil, for up to three months. Let it thaw at room temperature before serving.

Frequently Asked Questions

What if my fudge doesn't set properly?

If your fudge remains soft and doesn't set, it may not have reached the proper temperature during cooking. To fix this, reheat the fudge mixture gently, stirring constantly, until it reaches 234°F again. Pour it back into the pan to cool and set. If you find it too sweet, consider adding a pinch of salt to balance the flavors.

Can I add flavors or mix-ins to the fudge?

Absolutely! You can enhance the fudge with different flavors by adding extracts like almond or peppermint. For mix-ins, consider folding in nuts, dried fruit, or even mini marshmallows after the fudge has cooled to lukewarm. This adds texture and a fun twist to your Rich Cocoa Fudge.

Is there a vegan version of this fudge?

Yes, you can make a vegan version of this fudge by substituting the butter with coconut oil or a dairy-free margarine. Use plant-based milk, such as almond or oat milk, instead of regular milk. Ensure that any mix-ins, like chocolate chips or nuts, are also vegan-friendly to keep the entire recipe plant-based.
