Delightful bite-sized cookies with a nutty crunch and jam filling, perfect for teatime or special occasions, offering a sweet, buttery flavor with a hint of vanilla and pecans.

Ingredients

  • 1 cup sifted flour
  • dash of salt
  • 1/2 cup butter
  • 3 tablespoons powdered sugar
  • 1 cup finely chopped pecans
  • 1 teaspoon vanilla extract
  • raspberry jam or your favorite flavor

Instructions

  1. Sift flour and salt onto waxed paper or foil.
  2. Cream butter with powdered sugar until well blended in a medium-sized bowl.
  3. Stir in sifted dry ingredients, blending well to make a soft dough.
  4. Stir in chopped pecans and vanilla extract.
  5. Chill several hours, preferably overnight, until firm enough to handle.
  6. Roll dough into marble-sized balls, a teaspoon at a time, between palms of hands.
  7. Place on an ungreased cookie sheet, 2 inches apart.
  8. Make a hollow in the center of each cookie with your thumb.
  9. Fill the hollow with about 1/2 teaspoon of raspberry jam or your preferred flavor.
  10. Bake at 300°F (150°C) for 20 minutes or until delicately golden.
