Ingredients

  • 1 c. long grain rice
  • 1 medium onion or 1 bunch green scallions
  • 1 1/2 Tbsp. vegetable oil
  • salt to taste
  • 1 tsp. turmeric
  • 1 c. mixed vegetables
  • 2 c. water

Instructions

  1. Heat vegetable oil in a large cast-iron or heavy pan with a tight-fitting lid until sizzling hot.
  2. Add the uncooked long grain rice to the pan and keep it moving to toast to a golden color.
  3. Remove the rice immediately from heat and pour in 2 cups of water, adding turmeric.
  4. Cover tightly and cook on slow heat for 15 minutes.
  5. Add the mixed vegetables and cook for another 10 to 15 minutes, depending on the vegetables.
  6. Ensure to cook on low heat throughout to prevent burning and to allow flavors to meld.
