Ingredients

  • 2 pkg chopped broccoli
  • 2 eggs
  • 1/2 c mayonnaise
  • 1 c Ritz cracker crumbs
  • 1 can cream of mushroom soup
  • 1 c Velveeta cheese diced
  • margarine

Instructions

  1. Cook broccoli in salted water for 5 minutes, then drain.
  2. Combine mushroom soup, beaten eggs, mayonnaise, and diced Velveeta cheese in a bowl.
  3. Mix well until smooth.
  4. Add cooked broccoli to the mixture and combine.
  5. Pour the mixture into a baking dish.
  6. Sprinkle with Ritz cracker crumbs on top.
  7. Dot with small pieces of margarine.
  8. Bake at 350°F (175°C) for 30 to 35 minutes until bubbly and golden.
