Ingredients

  • 2 packages chopped broccoli
  • 2 eggs
  • 1 cup Velveeta cheese, diced
  • 1 cup Ritz cracker crumbs
  • 1 can cream of mushroom soup
  • 1/2 cup mayonnaise

Instructions

  1. Cook chopped broccoli in water for 5 minutes; drain well.
  2. In a bowl, combine cream of mushroom soup, well-beaten eggs, mayonnaise, and diced Velveeta cheese; mix well.
  3. Add the drained broccoli to the mixture and pour into a 13 x 9-inch baking dish.
  4. Sprinkle Ritz cracker crumbs evenly over the top (can also use corn bread or herb dressing).
  5. Dot the top with small pieces of butter.
  6. Bake in a preheated oven at 350°F (175°C) for 30 to 35 minutes until bubbly and golden.
