  2. Use 10-inch flour tortillas and cut them in half if desired.
  3. Spread each tortilla liberally with horseradish sauce or mayonnaise.
  4. Place one slice of roast beef in the center of each tortilla and top with a large leaf of lettuce.
  5. Roll up the tortilla and place face down in a 9 x 13 inch pan to prevent unrolling.
  6. Repeat with remaining tortillas and beef.
  7. Cover with Saran Wrap and refrigerate.
  8. These are better if made a day ahead.
  9. Slice in half before serving if desired.

Tips & Substitutions

For added flavor, consider using a flavored mayonnaise or adding herbs to the horseradish sauce. You can substitute the roast beef with turkey or a plant-based deli meat for a lighter or vegan option. If you prefer a crunch, add grated carrots or sliced cucumbers inside the roll-ups. Ensure the tortillas are fresh and pliable for easy rolling.

Serving Suggestions

Serve these roast beef roll-ups as a quick lunch or appetizer. They pair beautifully with Corn Salad(Club Member: Keisha Hudson) for a fresh side. Consider presenting them with a dipping sauce on the side, such as extra horseradish or a spicy mustard. For a more substantial meal, add a fruit salad or chips.

Storage & Reheating

Store leftover roll-ups in an airtight container in the refrigerator for up to three days. To keep them from getting soggy, place a paper towel in the container to absorb excess moisture. These roll-ups are best served cold, but you can reheat them in the microwave for a few seconds if desired.

Frequently Asked Questions

Can I make these roll-ups ahead of time?

Yes, these roll-ups are ideal for making ahead. In fact, they taste better after sitting in the refrigerator for a day, as the flavors meld together. Just ensure they are tightly wrapped in plastic wrap or stored in an airtight container to maintain freshness.

What can I use instead of horseradish sauce?

If you're not a fan of horseradish sauce, mayonnaise works well as a milder alternative. You can also blend mayonnaise with mustard or hot sauce for an extra kick. For a vegan option, try a plant-based mayo or a spread made from avocado.

Can I freeze these roll-ups?

Freezing is not recommended for these roll-ups as the tortillas may become soggy once thawed. However, you can freeze the ingredients separately, such as the roast beef and tortillas, and assemble them fresh when ready to serve.
