Ingredients

  • 1 Tbsp. olive oil
  • 1 garlic clove, crushed
  • 1/4 tsp. salt
  • 1/4 tsp. freshly ground pepper
  • 1 1/2 lb. small new red potatoes, scrubbed and quartered
  • 1 Tbsp. chopped fresh parsley

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Mix olive oil, crushed garlic, salt, and freshly ground pepper in a 9-inch square baking dish.
  3. Add the quartered potatoes and turn to coat with the oil mixture.
