Ingredients

  • 1 large green pepper
  • 12 to 14 spring onions
  • 5 Tbsp. corn oil
  • 3/4 tsp. salt
  • 1 lb. meat
  • 4 zucchini or yellow squash
  • 12 to 14 fresh mushrooms
  • 2 1/2 Tbsp. lemon juice
  • 3/4 tsp. black pepper

Instructions

  1. Cut the green pepper in half and remove and discard the core and seeds.
  2. Cut the pepper flesh into 1-inch pieces with a sharp knife.
  3. Prepare the other vegetables and meat as desired for skewering.
  4. Thread the green pepper, spring onions, zucchini or yellow squash, mushrooms, and meat onto skewers.
  5. Mix lemon juice, salt, black pepper, and corn oil to make a marinade.
  6. Brush the kebabs with the marinade or marinate for 30 minutes.
  7. Grill or cook the kebabs until the meat is cooked through and vegetables are tender, about 15 minutes.
