Ingredients

  • 3 Tbsp. olive oil
  • 2 Tbsp. maple syrup
  • 1/2 tsp. salt
  • 1/2 cup fresh or frozen cranberries

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Peel the squash and cut it into 1 1/2-inch chunks.
  3. In a shallow roasting pan, toss the squash with olive oil, maple syrup, and salt.
  4. Arrange the squash in a single layer in the pan.
  5. Roast for 35 to 40 minutes, turning every 10 minutes, until tender and golden.
  6. Add cranberries during the last few minutes of roasting or serve alongside.
