Ingredients

  • 1 pkg. penne noodles
  • 1 red pepper
  • 1 yellow pepper
  • 2 green peppers
  • olive oil
  • kosher salt
  • 1 onion
  • 1 can diced tomatoes
  • 2 garlic cloves
  • fresh basil
  • fennel seed

Instructions

  1. Cook penne noodles according to package directions and set aside.
  2. Slice peppers in half, hollow out the insides, and place them hollow side down on a baking sheet.
  3. Wipe olive oil on the outside of peppers and sprinkle with kosher salt.
  4. Broil peppers until they turn black, approximately 15 minutes.
  5. Wipe the charred skin off the peppers with a paper towel and thinly slice them.
  6. In a pan, add diced onion, diced tomatoes, minced garlic, and fennel seed; cook until fragrant.
  7. Add sliced roasted peppers to the pan and toss with cooked pasta and fresh basil.
  8. Serve topped with Parmesan cheese.
