Ingredients

  • 6 Serrano chile peppers
  • 1 lb. plum tomatoes, finely chopped
  • 2 Tbsp. purple onion, finely chopped
  • 1/4 c. fresh orange juice
  • 2 Tbsp. yellow bell pepper, chopped
  • 2 Tbsp. chopped fresh cilantro
  • 1 Tbsp. rice vinegar
  • 1/2 tsp. salt
  • 1/2 tsp. sugar
  • Cumin to taste

Instructions

  1. Cook Serrano peppers in a cast iron skillet on high heat for 10 minutes or until blackened, turning peppers frequently.
  2. Combine the roasted Serrano peppers, chopped tomatoes, purple onion, orange juice, yellow bell pepper, cilantro, rice vinegar, salt, sugar, and cumin in a bowl.
  3. Cover and refrigerate the salsa for at least 1 hour before serving to allow flavors to meld.
